Description

Fudgy chocolate Baileys Swirl Irish Cream Brownies topped with a creamy cheesecake-style swirl (made family-friendly using non-alcoholic Irish cream coffee creamer). The tangy cream cheese swirl balances the rich chocolate, and the marbled top looks bakery-beautiful—perfect for holidays, parties, or an anytime treat.

Ingredients

Brownie Layer:

– 1/2 cup (113g) unsalted butter, melted

– 1 1/4 cups (250g) granulated sugar

– 2 large eggs

– 1 tsp vanilla extract

– 2/3 cup (85g) unsweetened cocoa powder

– 1/2 tsp kosher salt

– Pinch of salt

Irish Cream Swirl (Family-Friendly):

– 3/4 cup (170g) cream cheese, softened

– 1/2 cup (120ml) non-alcoholic Irish cream coffee creamer

– 1/2 cup (60g) powdered sugar (add up to 1 cup / 120g for sweeter swirl)

– 1 large egg

Instructions

1. Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment and lightly grease.

2. In a bowl, whisk melted butter and granulated sugar until glossy.

3. Whisk in 2 eggs and vanilla until smooth.

4. Stir in cocoa powder, kosher salt, and a pinch of salt until just combined (do not overmix).

5. In a separate bowl, beat cream cheese until smooth.

6. Mix in powdered sugar, non-alcoholic Irish cream creamer, and 1 egg until creamy and lump-free.

7. Pour brownie batter into the pan and smooth the top.

8. Spoon the cream cheese mixture over the batter in small dollops.

9. Use a knife/skewer to gently swirl into a marbled pattern (don’t over-swirl).

10. Bake 35–40 minutes, until edges are set and the center has a slight jiggle; a toothpick should come out with moist crumbs.

11. Cool completely (or chill 1–2 hours) before slicing for clean, sharp swirls.

Notes

Family-safe swap: Use non-alcoholic Irish cream coffee creamer (or vanilla creamer + 1 tsp cocoa powder).

For extra chocolate: Fold 1/2 cup chocolate chips into the brownie batter.

For clean slices: Chill brownies before cutting; wipe knife between cuts.

Storage: Refrigerate up to 5 days in an airtight container. Freeze (sliced) up to 2 months.
