Ingredients

4 salmon fillets

1 tbsp olive oil

3 cloves garlic, minced

1/3 cup sun-dried tomatoes, chopped

1/3 cup chicken broth

3/4 cup heavy cream

1/4 cup Parmesan cheese, grated

1 tsp Italian seasoning

1/2 tsp salt

1/4 tsp black pepper

2 tbsp fresh parsley, chopped


Instructions

1. Pat salmon dry and season both sides with salt and black pepper.

2. Heat olive oil in a large skillet over medium heat. Sear salmon 3–4 minutes per side until golden and mostly cooked through; transfer to a plate.

3. In the same skillet, sauté garlic for about 30 seconds until fragrant.

4. Stir in sun-dried tomatoes and Italian seasoning.

5. Pour in chicken broth and scrape up browned bits from the pan.

6. Stir in heavy cream and Parmesan; simmer 3–5 minutes until slightly thickened.

7. Return salmon to the skillet and spoon sauce over top; simmer 2–3 minutes until salmon is cooked through.

8. Remove from heat, sprinkle with fresh parsley, and serve warm.

Notes

Lighter option: swap heavy cream for half-and-half or evaporated milk (sauce will be thinner).

Broth swap: use vegetable broth if needed.

Cheese swap: Asiago or mozzarella can replace Parmesan.
