Description

These tasty blackened chicken tacos with pineapple salsa are smoky, sweet, fresh, and easy to make for a fun weeknight dinner or taco night.


Ingredients

1.5 lb chicken breast, cut into 1-inch pieces

1 tsp smoked paprika

1 tsp chili powder

1.5 tsp cumin, toasted

1/2 tsp onion powder

1/2 tsp garlic powder

1 tsp salt

1/2 tsp black pepper

1/4 tsp oregano

1/4 tsp cayenne

1.5 tsp honey

1 lime, zest and juice

2 tbsp olive oil

1 cup pineapple, diced

1 cup tomato, seeded and diced

1/3 cup red onion, finely diced

2 tbsp jalapeno, seeded and minced

1/4 cup cilantro, chopped

1 lime, zest and juice

1/4 tsp sea salt

8 small tortillas

1/2 cup crumbled cotija cheese


Instructions

1. Toast the cumin in a dry skillet over medium heat for 1 to 2 minutes until fragrant.

2. In a large bowl, mix smoked paprika, chili powder, toasted cumin, onion powder, garlic powder, salt, black pepper, oregano, cayenne, honey, lime zest, lime juice, and olive oil.

3. Add the chicken pieces and toss well to coat.

4. Heat a skillet over medium-high heat and cook the chicken for 6 to 8 minutes, stirring occasionally, until blackened on the outside and fully cooked through.

5. In a separate bowl, combine pineapple, tomato, red onion, jalapeno, cilantro, lime zest, lime juice, and sea salt to make the salsa.

6. Warm the tortillas in a dry skillet or microwave until soft.

7. Fill each tortilla with blackened chicken.

8. Top with pineapple salsa and crumbled cotija cheese, then serve immediately.

Notes

For a milder version, reduce or omit the cayenne and jalapeno.

Chicken thighs can be used instead of chicken breast for extra juiciness.

Corn tortillas work well in place of flour tortillas.

Mango can be substituted for pineapple for a sweeter tropical flavor.
