Crispy tater tots top a savory layer of seasoned ground beef, sautéed onion and bell pepper, creamy mushroom soup, and melty cheddar for an easy, family-friendly meal that’s great for leftovers and potlucks too.


Ingredients

1 lb ground beef

1 small yellow onion, diced

1 green bell pepper, diced

1 can (10.5 oz) cream of mushroom soup

1/2 tsp salt

1/2 tsp black pepper

3 cups frozen tater tots

1 1/2 cups shredded cheddar cheese


Instructions

1. Preheat oven to 375°F (190°C). Lightly grease a medium baking dish.

2. Brown ground beef in a large skillet over medium heat until fully cooked; drain excess grease.

3. Add diced onion and green bell pepper; sauté 3–4 minutes until softened.

4. Season with salt and black pepper, then stir in cream of mushroom soup until creamy and combined.

5. Spread beef mixture evenly in the baking dish.

6. Arrange frozen tater tots in a single even layer over the beef mixture.

7. Sprinkle shredded cheddar cheese evenly over the tater tots.

8. Bake uncovered 30–35 minutes, until tots are crispy and cheese is melted and bubbly.

9. Rest 5 minutes before serving. (Optional: broil 2–3 minutes for extra-crispy topping.)

Notes

Make it leaner: use ground turkey or chicken.

Soup swap: cream of chicken or cream of celery work well.
