Description

These Chocolate Caramel Cheesecake Bites are made with smooth cream cheese, buttery caramel, and graham crumbs, then dipped in silky chocolate and finished with flaky sea salt. Perfect for parties, holiday platters, and sweet snacks—no oven needed.

8 oz cream cheese, softened

1/2 cup soft caramels (about 2025 pieces), unwrapped

1/4 cup powdered sugar

1/2 tsp vanilla extract

1/4 cup graham cracker crumbs

1 1/2 cups semi-sweet chocolate chips

Flaky sea salt, for garnish (optional)


Instructions

1. Soften the caramels: Microwave unwrapped caramels in 10–15 second bursts (stirring between) until smooth and pourable. Let cool 2–3 minutes.

2. Make the cheesecake filling: Beat softened cream cheese until smooth. Mix in powdered sugar and vanilla.

3. Add caramel + crumbs: Stir in the softened caramel until fully blended, then mix in graham cracker crumbs.

4. Chill: Cover and refrigerate 30 minutes, or until firm enough to scoop.

5. Shape: Scoop and roll into 18–24 small balls. Place on a parchment-lined tray and chill 15–20 minutes.

6. Melt chocolate: Melt chocolate chips until smooth (microwave in short bursts, stirring).

7. Dip: Dip each chilled bite into melted chocolate, let excess drip off, and place back on parchment.

8. Finish + set: Sprinkle with flaky sea salt if using. Refrigerate 15–30 minutes, until chocolate is set.

Notes

For easier rolling, lightly oil your hands or use a small cookie scoop.

If your caramel is very thick, warm it just enough to loosen—too hot can make the filling runny.

Chocolate options: milk chocolate for sweeter bites or dark chocolate for deeper flavor.

Storage: Keep refrigerated in an airtight container up to 5 days. Freeze up to 1 month; thaw in the fridge.
