Description

Comforting Ground Beef Goulash is a hearty one-pot dinner made with elbow macaroni, seasoned ground beef, and a rich tomato sauce. It’s quick, cozy, and perfect for busy weeknights, meal prep, and picky eaters.


Ingredients

1 lb ground beef

1 medium yellow onion, diced

3 cloves garlic, minced

1 can diced tomatoes (with juice), 14.5 oz

1 can tomato sauce, 15 oz

2 cups beef broth

1 tbsp Worcestershire sauce

1 tsp Italian seasoning

Salt, to taste

Black pepper, to taste

2 cups elbow macaroni (dry)

2 tbsp fresh parsley, chopped (optional, for serving)


Instructions

1. Brown the ground beef in a large pot over medium heat until fully cooked; drain excess grease if needed.

2. Add diced onion and cook 2–3 minutes until softened.

3. Stir in minced garlic and cook 30 seconds until fragrant.

4. Add diced tomatoes (with juice), tomato sauce, beef broth, Worcestershire sauce, and Italian seasoning; season with salt and black pepper. Stir well.

5. Bring to a gentle simmer, then stir in the elbow macaroni.

6. Cover and simmer 10–12 minutes, stirring occasionally, until pasta is tender and the sauce thickens.

7. Taste and adjust seasoning. Top with fresh parsley (optional) and serve warm.

Notes

Make it lighter: swap ground turkey for ground beef.

Add veggies: bell pepper, zucchini, or corn work great.

Storage: refrigerate in an airtight container up to 4 days.

Reheat: warm on the stove or microwave with a splash of broth if it thickens.

Freezing: best frozen without pasta if possible (pasta can soften), but it still freezes well for up to 2 months.
