1 lb chicken breast or thighs, cut into bite-size pieces or thin strips

8 oz mushrooms, sliced

1 small onion, diced

2 cloves garlic, minced

2 tbsp butter

2 tbsp all-purpose flour

1 cup chicken broth

1 tsp Dijon mustard

1/2 cup sour cream

1/4 cup heavy cream

1/2 tsp salt (plus more to taste)

1/4 tsp black pepper (plus more to taste)

8 oz egg noodles

2 tbsp fresh parsley, chopped


Instructions

1. Bring a large pot of salted water to a boil. Cook egg noodles according to package directions. Drain and set aside.

2. Melt butter in a large skillet over medium heat. Add chicken and cook until lightly golden and cooked through, about 6–8 minutes. Transfer chicken to a plate.

3. In the same skillet, add onion and mushrooms. Cook until softened and lightly browned, about 5–6 minutes. Add garlic and cook 30 seconds, stirring.

4. Sprinkle flour over the vegetables and stir until evenly coated, about 1 minute.

5. Slowly pour in chicken broth while stirring to prevent lumps. Stir in Dijon mustard. Simmer until the sauce thickens, about 2–3 minutes.

6. Reduce heat to low. Stir in sour cream and heavy cream until smooth (do not boil). Taste and season with salt and pepper.

7. Return chicken (and any juices) to the skillet. Simmer gently 3–5 minutes until warmed through and the sauce is creamy.

8. Serve over egg noodles and garnish with chopped parsley.

Notes

Avoid boiling after adding sour cream to keep the sauce smooth.

Swap egg noodles for rice or mashed potatoes if you prefer.

For a lighter option, replace heavy cream with extra sour cream or plain Greek yogurt.

Store leftovers in an airtight container for up to 3 days. Reheat gently with a splash of broth if needed.
