Description
Crispy Golden Thyme Potato Terrine is an elegant potato side dish made with thin layers of potatoes baked until tender inside and crispy outside. Infused with butter, garlic, and fresh thyme, it slices beautifully and looks stunning on the plate—perfect for holiday dinners and special occasions.
Ingredients
2 1/2 lb (about 1.1 kg) Yukon Gold potatoes, peeled (optional)
6 tbsp (85 g) unsalted butter, melted (plus extra for greasing)
2 cloves garlic, finely minced
3 tbsp fresh thyme leaves
1 heaping tsp kosher salt
Freshly cracked black pepper, to taste
Instructions
1. Preheat oven to 375°F (190°C). Line an 8.5×4.5-inch (or similar) loaf pan with parchment paper, leaving overhang for lifting. Grease lightly with butter.
2. Slice potatoes very thin (about 1/8-inch / 3 mm) using a mandoline or sharp knife.
3. In a large bowl, gently toss potato slices with melted butter, garlic, thyme, salt, and black pepper until coated.
4. Layer potatoes tightly in the loaf pan, pressing down every few layers to remove air gaps and create compact, even layers.
5. Cover the pan tightly with foil and bake 50–60 minutes, or until a knife slides in easily.
6. Remove foil and bake 20–25 minutes more, until the top is deeply golden and the edges are crisp.
7. Let rest 10–15 minutes. Lift out using parchment, slice into neat pieces, and serve warm.
Notes
For the cleanest slices, let the terrine rest at least 10 minutes before cutting.
Extra-crispy tip: Brush the top with 1–2 teaspoons melted butter before the uncovered bake.
Make-ahead: Bake fully, cool, refrigerate, then reheat uncovered at 375°F (190°C) for 15–20 minutes to re-crisp.
Swaps: Replace thyme with rosemary or sage. For dairy-free, use olive oil or plant-based butter.
