Description
This Blackberry Almond Coffee Cake is soft, buttery, and bursting with juicy blackberries, finished with a crunchy cinnamon-almond streusel. It’s an easy, family-friendly bake that’s perfect for brunch, snack time, or dessert with coffee.
Ingredients
For the Cake:
• 1 1/2 cups all-purpose flour
• 1 teaspoon baking powder
• 1/2 teaspoon baking soda
• 1/4 teaspoon salt
• 1/2 cup unsalted butter, softened
• 3/4 cup granulated sugar
• 2 large eggs
• 1 teaspoon almond extract
• 1 teaspoon vanilla extract
• 1/2 cup buttermilk (or 1/2 cup milk + 1/2 tablespoon vinegar; rest 5 minutes)
• 1 1/2 cups blackberries, fresh or frozen (do not thaw if frozen)
For the Almond Streusel Topping:
• 1/2 cup all-purpose flour
• 1/4 cup brown sugar, packed
• 1/4 cup sliced almonds
• 1/4 cup unsalted butter, cold and cubed
• 1/2 teaspoon cinnamon
Instructions
1. Preheat oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment.
2. In a medium bowl, whisk together 1 1/2 cups flour, baking powder, baking soda, and salt.
3. In a large bowl, cream softened butter and granulated sugar until light and fluffy (about 2–3 minutes).
4. Beat in eggs one at a time, then mix in almond extract and vanilla extract.
5. Add the dry ingredients in 2–3 additions, alternating with the buttermilk. Mix just until combined (don’t overmix).
6. Gently fold in the blackberries.
7. In a small bowl, make the streusel: mix 1/2 cup flour, brown sugar, sliced almonds, and cinnamon. Cut in cold cubed butter until crumbly.
8. Spread batter evenly into the prepared pan. Sprinkle streusel evenly over the top.
9. Bake 40–45 minutes, until golden and a toothpick in the center comes out clean (a few moist crumbs are fine).
10. Cool 15–20 minutes before slicing. Serve warm or at room temperature.
Notes
Frozen blackberries: Use straight from frozen (do not thaw) to prevent excess juice.
No buttermilk: Mix 1/2 cup milk with 1/2 tablespoon vinegar or lemon juice; rest 5 minutes.
Nut-free option: Skip sliced almonds and add 2 extra tablespoons brown sugar to the streusel.
Storage: Cover and keep at room temp up to 2 days, refrigerate up to 5 days, or freeze slices up to 2 months.
Serving tip: Dust with powdered sugar or serve with yogurt for brunch.
