Description

Creamy, spicy, and cheesy—this Buffalo Chicken Sandwich is a fun comfort-food twist that’s perfect for game day or an easy family dinner.


Ingredients

1 1/2 cups cooked chicken, shredded or chopped

1/3 cup hot sauce (Buffalo-style)

1/3 cup cream cheese, softened

2 tbsp blue cheese (crumbles or dressing)

8 slices sandwich bread

8 slices cheese (cheddar, mozzarella, Monterey Jack, or American)

4 leaves lettuce

8 slices tomato

1/4 cup onion, thinly sliced

Cooking spray or butter, for grilling


Instructions

1. In a medium bowl, mix chicken, hot sauce, cream cheese, and blue cheese until creamy and well combined.

2. Heat a skillet or griddle over medium heat. Lightly coat with cooking spray (or melt a little butter).

3. Assemble each sandwich: place 1 slice of bread down, add 1 slice of cheese, spread on a generous amount of buffalo chicken mixture, then top with lettuce, tomato, and onion. Add a second slice of cheese and finish with the top bread slice.

4. Place sandwiches on the skillet and cook 3–4 minutes per side, pressing gently, until bread is golden and cheese is melted.

5. Remove from heat, slice in half, and serve warm.

Notes

Make it milder: use mild buffalo sauce or mix hot sauce with extra cream cheese.

No blue cheese? Swap ranch dressing or skip it.

Best cheese melts: mozzarella, Monterey Jack, or American.

Leftover filling keeps in the fridge up to 3 days—reheat gently and assemble fresh.
