Easy Chocolate Coconut Balls are rich, chewy, no-bake dessert bites made with shredded coconut, sweetened condensed milk, and silky melted semisweet chocolate. Perfect for holidays, gifting, or quick sweet cravings—just mix, roll, and chill.
Ingredients
2 cups unsweetened shredded coconut
1 cup sweetened condensed milk
1 tsp vanilla extract
1/4 tsp salt
8 oz semisweet chocolate chips (or chopped semisweet chocolate)
1 tbsp coconut oil
Optional: extra shredded coconut for rolling
Instructions
1. Line a tray or plate with parchment paper.
2. In a large bowl, mix shredded coconut, sweetened condensed milk, vanilla extract, and salt until evenly combined.
3. Melt semisweet chocolate with coconut oil until smooth (microwave in short bursts, stirring each time).
4. Pour melted chocolate into the coconut mixture and stir until fully combined.
5. Chill the mixture for 15–20 minutes to make it easier to roll.
6. Scoop and roll into 1-inch balls and place on the prepared tray.
7. Optional: roll the balls in extra shredded coconut.
8. Refrigerate at least 30 minutes, or until firm. Serve chilled.
Notes
Chilling helps the mixture firm up for easy rolling. If it’s too sticky, chill 10 more minutes.
For a sweeter result, use milk chocolate; for deeper flavor, use dark chocolate.
Dairy-free option: swap in sweetened condensed coconut milk.
Storage: Refrigerate in an airtight container up to 7 days, or freeze up to 2 months.
