Cozy, chewy cinnamon sugar blondies made with brown sugar, honey, and vanilla. A quick fall-style dessert bar with a sweet cinnamon topping—perfect for sharing, gifting, or an easy weeknight treat.
Ingredients
FOR THE BLONDIES:
• 1/2 cup (113 g) unsalted butter, melted and slightly cooled
• 1 cup (200 g) light brown sugar, packed
• 1/4 cup (85 g) honey
• 1 large egg
• 1 tsp vanilla extract
• 1 cup (125 g) all-purpose flour
• 1 tsp ground cinnamon
• 1/2 tsp salt
CINNAMON SUGAR TOPPING:
• 3 tbsp (38 g) granulated sugar
• 1/2 tsp ground cinnamon (optional, for extra cinnamon punch)
Instructions
1. Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper (or grease well).
2. Melt the butter and let it cool 3–5 minutes so it’s warm, not hot.
3. In a mixing bowl, stir together melted butter, brown sugar, and honey until smooth and glossy.
4. Whisk in the egg and vanilla until fully combined.
5. In a second bowl, whisk flour, cinnamon, and salt.
6. Add dry ingredients to wet ingredients and stir just until no dry flour remains (don’t overmix).
7. Spread batter evenly into the prepared pan.
8. Mix granulated sugar with the optional 1/2 tsp cinnamon, then sprinkle evenly over the batter.
9. Bake 20–25 minutes, until edges are lightly golden and the center is set (a toothpick should come out with a few moist crumbs).
10. Cool completely in the pan before slicing into 9–12 bars for clean cuts and best chewiness.
Notes
PAN SIZE: 8×8-inch makes thick, chewy bars. For thinner bars, use a 9×9-inch pan and start checking at ~18 minutes.
DON’T OVERBAKE: Pull them when the center is set but still soft—carryover heat finishes the job.
ADD-INS: Fold in 1/2 cup chopped walnuts/pecans or 1/2 cup white chocolate chips.
SUBSTITUTIONS: Honey can be swapped 1:1 with maple syrup. Use plant-based butter for dairy-free.
