Description
This Easy Garlic Parmesan Chicken and Potatoes Bake is a one-pan dinner with tender seasoned chicken and crispy garlic-Parmesan potatoes, perfect for busy weeknights with minimal cleanup.
Ingredients
4 boneless skinless chicken breasts (or thighs)
1 teaspoon Italian seasoning
1/2 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil
1.5 pounds baby Yukon Gold or red potatoes, halved
3 tablespoons olive oil
4 cloves garlic, minced
1/3 cup grated Parmesan cheese
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon chopped fresh parsley (optional, for garnish)
Extra grated Parmesan, for serving (optional)
Instructions
1. Preheat the oven to 400°F (200°C) and line a large baking sheet with parchment paper or lightly grease it.
2. Pat the chicken dry with paper towels. In a small bowl, mix the Italian seasoning, smoked paprika, salt, and black pepper.
3. Rub the chicken breasts with olive oil, then coat them evenly with the seasoning mixture on all sides.
4. In a large bowl, toss the halved potatoes with olive oil, minced garlic, grated Parmesan cheese, salt, and black pepper until all the potatoes are well coated.
5. Place the seasoned chicken on one side of the prepared baking sheet.
6. Spread the seasoned potatoes on the other side of the sheet pan in a single layer for even roasting and crisp edges.
7. Roast in the preheated oven for 25 to 30 minutes, flipping the potatoes halfway through the cooking time.
8. Check that the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are tender and golden.
9. Optional: In the last 5 minutes of cooking, sprinkle extra Parmesan over the chicken and potatoes and broil briefly for a deeper golden crust.
10. Remove from the oven, garnish with chopped fresh parsley, and serve hot.
Notes
You can use boneless, skinless chicken thighs instead of breasts for extra juicy results.
Do not overcrowd the baking sheet so the potatoes get nicely crispy instead of steaming.
Add vegetables like green beans, broccoli, or carrot slices to the pan for a complete one-pan meal.
For milder flavor, reduce the garlic or smoked paprika slightly for kids or sensitive eaters.
