Description

These Easy Hashbrown Sausage Bites for Breakfast Bliss are crispy on the outside, soft and savory inside, and packed with comforting breakfast flavor in every bite. Perfect for busy mornings, weekend brunch, or make-ahead meal prep.


Ingredients

1 lb frozen shredded hashbrowns, thawed

12 oz ground turkey or chicken breakfast sausage

3 large eggs

1 cup shredded cheddar cheese (or mozzarella)

1/2 teaspoon onion powder

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

Olive oil or cooking spray, for greasing the pan


Instructions

1. Preheat your oven to 375°F (190°C) and lightly grease a 12-cup muffin pan with olive oil or cooking spray.

2. In a skillet over medium heat, cook the breakfast sausage, breaking it into small crumbles, until browned and fully cooked. Drain any excess fat and let it cool slightly.

3. In a large mixing bowl, combine the thawed shredded hashbrowns, cooked sausage, eggs, shredded cheese, onion powder, garlic powder, salt, and black pepper.

4. Stir the mixture until everything is evenly coated and the eggs are well distributed throughout.

5. Spoon the mixture into the prepared muffin cups, filling each one to the top and pressing down gently to compact the mixture.

6. Bake for 20–25 minutes, or until the tops are golden and the edges look crispy.

7. Remove the pan from the oven and let the bites cool in the muffin tin for about 5 minutes before loosening the edges and lifting them out.

8. Serve warm for breakfast or brunch, or cool completely for meal prep and store for later.

Notes

For a pork-free version, use turkey or chicken breakfast sausage instead of pork.

You can add finely diced bell peppers, spinach, or mushrooms to the mixture for extra veggies and color.

If using frozen hashbrowns straight from the freezer, thaw and pat them dry with a towel to avoid excess moisture.

To freeze, let the bites cool completely, then place them on a baking sheet to freeze before transferring to a freezer-safe bag or container.

Reheat in the oven or air fryer until warmed through and lightly crisp on the edges for best texture.
