Description
Soft, buttery Sweet Oatmeal Bars with Jam layered with fruity raspberry jam and a crumbly oat topping—perfect for grab-and-go breakfast, snacks, or potlucks.
Ingredients
1 1/4 cups rolled oats
1 1/4 cups all-purpose flour
3/4 cup brown sugar (packed)
1/4 tsp baking soda
1/4 tsp ground cinnamon
1/4 tsp salt
1/2 cup butter (melted or softened)
3/4 cup raspberry jam
Instructions
1. Preheat oven to 350°F (175°C). Line or grease an 8×8-inch pan (parchment recommended).
2. In a large bowl, mix oats, flour, brown sugar, baking soda, cinnamon, and salt.
3. Add butter and mix until crumbly and it holds together when pressed.
4. Press about 2/3 of the mixture firmly into the pan to form the crust.
5. Spread raspberry jam evenly over the crust (leave a small border at the edges).
6. Sprinkle remaining oat mixture over the jam and gently press it down slightly.
7. Bake 30–35 minutes, until lightly golden and jam bubbles at the edges.
8. Cool completely before slicing into bars for clean cuts.
Notes
Jam swap: strawberry, blueberry, peach, or mixed berry all work.
Dairy-free: use plant-based butter.
Texture tip: cooling fully helps the bars set and slice neatly.
Storage: airtight at room temp up to 3 days; fridge up to 1 week; freeze up to 2 months.
