Ingredients
1 cup plain Greek yogurt
1/2 cup creamy peanut butter
1/4 cup honey
1 teaspoon vanilla extract
1/2 cup mini chocolate chips
1/4 teaspoon sea salt
Instructions
1. In a medium mixing bowl, combine the Greek yogurt, peanut butter, honey, vanilla extract, and sea salt. Mix until smooth and well combined.
2. Fold in the mini chocolate chips until evenly distributed throughout the mixture.
3. Line a baking sheet with parchment paper. Using a tablespoon, scoop out the mixture and drop it onto the prepared baking sheet, forming small bite-sized mounds.
4. Place the baking sheet in the freezer and freeze for at least 2 hours, or until the bites are solid.
5. Once frozen, transfer the bites to an airtight container or a zip-top bag for easy storage. Keep them in the freezer until ready to enjoy.
Notes
For a peanut-free version, use almond butter, cashew butter, or sunflower seed butter.
You can make these dairy-free by using a plant-based yogurt and dairy-free chocolate chips.
Adjust the sweetness by adding a little more or less honey, to taste.
For extra texture, fold in chopped nuts, granola, or shredded coconut before freezing.
