Peppermint Filling:

2 1/4 cups powdered sugar

1 1/2 tbsp unsalted butter, softened

2 tbsp heavy cream

1/2 tsp peppermint extract

1/2 tsp vanilla extract

Pinch of salt

Optional: natural food coloring

Chocolate Coating:

10 oz semi-sweet or dark chocolate (chips or chopped)

1 tbsp coconut oil or shortening

Optional Topping:

Flaky sea salt


Instructions

1. In a mixing bowl, combine powdered sugar, softened butter, heavy cream, peppermint extract, vanilla extract, and a pinch of salt. Mix until a thick, smooth dough forms.

2. If using, add a tiny amount of natural food coloring and mix until evenly tinted.

3. Dust a surface lightly with powdered sugar and roll the dough to about 1/4-inch thick.

4. Cut into small circles with a cookie cutter or bottle cap and place on a parchment-lined tray.

5. Chill patties in the refrigerator for 30–45 minutes (or freeze 15–20 minutes) until firm.

6. Melt chocolate with coconut oil (or shortening) in a microwave in 20–30 second bursts, stirring until smooth (or use a double boiler).

7. Dip each chilled patty into melted chocolate using a fork. Tap gently to remove excess, then return to parchment.

8. If desired, sprinkle with flaky sea salt before the chocolate sets.

9. Chill 15–20 minutes until chocolate is fully firm. Serve and enjoy.

Notes

Mint strength varies by brand—start with 1/2 tsp peppermint extract and increase slightly only if you want a stronger “cool” flavor.

For a smoother look, let the first coat set, then dip a second time.

Dairy-free swaps: plant-based butter + coconut cream + dairy-free chocolate chips.
