For the Roll-Ups

8 slices Swiss cheese

812 slices corned beef (thinly sliced; enough to cover each cheese slice)

1 cup fermented sauerkraut, drained and patted very dry

Avocado oil spray or 1–2 tbsp melted butter (for cooking)

Freshly cracked black pepper, to taste

Everything bagel seasoning or caraway seeds, to taste

For the Creamy Reuben-Style Dressing

1/2 cup high-quality mayonnaise

2 tbsp no-sugar-added ketchup

1 tbsp dill pickle relish (sugar-free) or finely chopped dill pickles

1 tsp prepared horseradish

1 tsp apple cider vinegar

1/4 tsp onion powder

1/2 tsp smoked paprika

Sea salt, to taste


Instructions

1. Make the dressing: In a small bowl, whisk mayo, ketchup, relish, horseradish, vinegar, onion powder, smoked paprika, and salt until smooth. Chill while you assemble.

2. Prep sauerkraut: Drain very well and pat dry with paper towels to prevent sogginess.

3. Assemble: Lay out Swiss cheese slices. Top each with corned beef and a small spoonful of sauerkraut.

4. Roll: Roll each slice into a tight cylinder. Place seam-side down.

5. Season: Lightly spray/brush with avocado oil or melted butter. Sprinkle with pepper and everything bagel seasoning or caraway seeds.

6. Cook (choose one):

7. Pan-fry: Heat a nonstick skillet over medium heat. Cook roll-ups seam-side down first, turning until golden and crisp, 6–8 minutes total.

8. Air-fry: Air fry at 375°F (190°C) until crisp and browned, about 6–10 minutes, turning halfway if needed.

9. Serve: Let cool 1–2 minutes, then serve warm with the dressing for dipping.

Notes

Drain and dry the sauerkraut well for maximum crispiness.

If your cheese slices are thin, work quickly so they don’t tear while rolling.

Swap Swiss with provolone or mozzarella if desired.

Store leftovers in an airtight container in the fridge up to 3 days. Reheat in an air fryer or skillet to bring back crispiness.
