Description

Mississippi Mud Chicken is a rich, comforting baked chicken dinner with a creamy ranch-BBQ-mushroom sauce and a gooey cheddar-mozzarella topping. Easy, family-friendly, and perfect for busy weeknights.


Ingredients

4 boneless, skinless chicken breasts

1 cup cream of mushroom soup

1/2 cup ranch dressing

1/4 cup barbecue sauce

1 tbsp Worcestershire sauce

1 tsp garlic powder

1 tsp onion powder

1 tsp paprika

Salt and black pepper, to taste

1/2 cup shredded cheddar cheese

1/2 cup shredded mozzarella cheese

Fresh parsley, chopped (for garnish)


Instructions

1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.

2. Pat chicken dry. Season both sides with garlic powder, onion powder, paprika, salt, and pepper.

3. Arrange chicken in the baking dish in a single layer.

4. In a bowl, whisk together cream of mushroom soup, ranch dressing, barbecue sauce, and Worcestershire sauce until smooth.

5. Spread the sauce evenly over the chicken.

6. Cover loosely with foil and bake 30 minutes.

7. Remove foil. Sprinkle cheddar and mozzarella evenly over the top.

8. Bake uncovered 10–15 minutes, until the cheese is melted and bubbly and the chicken reaches 165°F (74°C).

9. Rest 5 minutes. Garnish with fresh parsley and serve.

Notes

For extra flavor, use smoked paprika instead of regular paprika.

Prefer a milder taste? Choose a honey or mild BBQ sauce.

Cream of chicken soup can be swapped for cream of mushroom soup.

Leftovers: store airtight in the fridge up to 3 days; reheat gently until hot.
