Easy One-Pan Chicken with Buttered Noodles

Description

A cozy, family-friendly one-pan dinner: golden seared chicken breasts simmered with egg noodles in a savory garlic-butter broth, finished with fresh parsley. Minimal cleanup and big comfort-food flavor.


Ingredients

4 boneless, skinless chicken breasts (about 1.5 lbs)

8 oz egg noodles

4 tbsp real butter, divided

4 cloves garlic, minced

2 cups low-sodium chicken broth

1/4 cup fresh parsley, chopped

Salt, to taste

Black pepper, to taste


Instructions

1. Pat chicken dry; season both sides with salt and pepper.

2. Heat a large skillet over medium-high heat; melt 1 tbsp butter.

3. Sear chicken 5 minutes per side until golden. Transfer to a plate.

4. Add minced garlic to the skillet; sauté 1 minute until fragrant (don’t brown).

5. Pour in chicken broth; bring to a boil.

6. Stir in egg noodles; reduce to a simmer and cook 8–10 minutes, stirring occasionally, until al dente and most liquid is absorbed.

7. Reduce heat to low; stir in remaining 3 tbsp butter until glossy.

8. Return chicken to the pan; nestle into noodles and warm through 2–3 minutes (until chicken is cooked through).

9. Sprinkle with parsley. Taste and adjust salt and pepper. Serve warm.

Notes

Chicken thighs work great and stay extra juicy.

Add veggies: peas or spinach (stir in during the last 2 minutes), or thin carrots (add with the broth).

If noodles look dry, splash in extra broth a little at a time.

Storage: refrigerate in an airtight container up to 3 days. Reheat gently with a splash of broth.

Food safety: cook chicken to 165°F (74°C) in the thickest part.
