Description

Crispy, golden phyllo rolls filled with creamy feta, cream cheese, fresh mint, and sun-dried tomatoes (or roasted red peppers), baked until flaky and finished with a sweet-and-spicy chili honey drizzle. Perfect as an easy appetizer, brunch bite, or snack.


Ingredients

10 sheets phyllo pastry

200 g feta cheese, crumbled

50 g cream cheese, softened

2 tbsp sun-dried tomatoes OR roasted red peppers, finely chopped

1 tbsp fresh mint, finely chopped

2 tbsp sesame seeds

4 tbsp olive oil OR melted butter (for brushing)

Chili Honey Drizzle:

3 tbsp honey

1 1/2 tsp chili flakes (adjust to taste)

1/2 tsp lemon juice OR apple cider vinegar


Instructions

1. Preheat oven to 200°C (400°F) and line a baking tray with parchment paper.

2. Mix feta, cream cheese, mint, and sun-dried tomatoes (or roasted red peppers) until combined.

3. Lay 1 phyllo sheet on a clean surface and lightly brush with olive oil or melted butter; place a second sheet on top and brush again.

4. Spoon filling along the short edge, fold in the sides, then roll tightly into a log.

5. Place seam-side down on the tray; repeat with remaining phyllo and filling.

6. Brush tops lightly with oil/butter and sprinkle with sesame seeds.

7. Bake 18–22 minutes, until crisp and deeply golden.

8. Warm honey gently with chili flakes and lemon juice (or vinegar) for 1–2 minutes to infuse (do not boil).

9. Drizzle chili honey over warm rolls and serve immediately.

Notes

Adjust the chili flakes for your preferred heat level (use less for kids).

Keep phyllo covered with a slightly damp towel while working so it doesn’t dry out.

For extra crunch, use butter; for a lighter option, use olive oil.

Best served fresh, but leftovers re-crisp well in the oven or air fryer.

Avoid microwaving—phyllo will soften.
