Description

Quick Mint Chocolate Chip Protein Bites are no-bake, high-protein snacks made with almond butter, oats, vanilla protein powder, peppermint extract, and mini dark chocolate chips. They are perfect for a refreshing, grab-and-go bite or post-workout fuel.


Ingredients

Scale

1/2 cup (50g) rolled oats

1 cup (240g) almond butter

2 tbsp (42g) honey

1/4 cup (30g) vanilla protein powder

1/4 tsp peppermint extract

1/4 cup (40g) mini dark chocolate chips

12 tbsp (15–30ml) unsweetened almond milk, if needed


Instructions

1. In a large mixing bowl, combine rolled oats, almond butter, honey, vanilla protein powder, and peppermint extract. Mix thoroughly until the mixture starts to come together.

2. If the mixture is too dry or crumbly, add 1 tablespoon of unsweetened almond milk at a time and mix again until you reach a soft, rollable consistency.

3. Gently fold in the mini dark chocolate chips until evenly distributed throughout the mixture.

4. Scoop out about 1 tablespoon of the mixture and roll it between your palms to form a ball. Repeat with the remaining mixture.

5. Place the protein balls on a baking sheet lined with parchment paper in a single layer.

6. Refrigerate for at least 20 minutes to allow the protein bites to firm up.

7. Store the protein bites in an airtight container in the refrigerator for up to 1 week. Enjoy straight from the fridge or let them sit at room temperature for a few minutes before eating.

Notes

For a nut-free version, use sunflower seed butter instead of almond butter.

You can swap honey for maple syrup if you prefer a different sweetness.

Use chocolate protein powder instead of vanilla for a richer chocolate flavor.

Adjust the amount of peppermint extract to taste; start with 1/8 teaspoon if you prefer a milder mint flavor.

These protein bites can be frozen for up to 3 months. Freeze on a tray, then transfer to a freezer-safe container.

Great as a pre-workout or post-workout snack, or as a healthier dessert option.
