Description

Creamy, high-protein cheesecake for one—made with cottage cheese and yogurt, blended smooth and cooked in minutes. Perfect for a quick dessert craving or a healthier solo treat.

Ingredients

Scale

3/4 cup cottage cheese

3 tbsp yogurt

1 egg

2 tbsp protein powder (vanilla or plain)

1/2 tsp vanilla extract

Pinch of salt

Optional toppings: berries, honey, chocolate chips, granola, nut butter

Instructions

1. Add cottage cheese, yogurt, egg, protein powder, vanilla, and salt to a blender.

2. Blend until completely smooth and creamy.

3. Pour into a lightly greased microwave-safe ramekin or small oven-safe dish.

4. Cook until set (microwave in 30-second bursts OR bake at 350°F/175°C until edges are firm and center slightly jiggles).

5. Cool 5–10 minutes (or chill for a firmer texture).

6. Add toppings and serve.

Notes

For best texture, blend the cottage cheese until no curds remain.

Protein powder sweetness varies—taste the batter and add 1 tsp honey or maple syrup if desired.

Chill before serving for a more classic cheesecake feel.

Egg-free option: swap egg for 2–3 tbsp cornstarch (softer set).

Storage: best fresh, but can be refrigerated up to 24 hours.
