Description

Ingredients

For the chocolate crust:

• 2 1/2 cups chocolate graham cracker crumbs or crushed chocolate wafer cookies (about 1 package)

• 6 tbsp (85 g) unsalted butter, melted

For the creamy layer:

• 8 oz (225 g) cream cheese, softened

• 1 cup (120 g) powdered sugar

• 1 tsp vanilla extract

• 1 1/2 cups (360 ml) double cream, whipped to soft peaks

For the chocolate layer:

• 1 package instant chocolate pudding mix (about 3.9 oz / 110 g)

• 2 cups (480 ml) milk (cold)

• 1/2 cup (85 g) semi-sweet chocolate chips or melting chocolate (optional drizzle)

For topping:

• 1 1/2 cups fresh raspberries

• Grated dark chocolate or chocolate shavings (for garnish)


Instructions

1. Crush the chocolate cookies into fine crumbs. Mix with melted butter until evenly moistened.

2. Press the crumb mixture firmly into the bottom of a 9×13-inch dish to form an even crust. Chill 10 minutes.

3. Beat cream cheese, powdered sugar, and vanilla until smooth and fluffy.

4. In a separate bowl, whip the double cream to soft peaks. Fold it gently into the cream cheese mixture.

5. Spread the creamy layer evenly over the chilled crust.

6. Whisk instant chocolate pudding mix with cold milk for 2 minutes until thick. Let stand 3–5 minutes to set slightly.

7. Spread the chocolate pudding layer over the creamy layer.

8. Optional: Melt chocolate chips and drizzle over the pudding layer for extra richness.

9. Scatter fresh raspberries evenly on top. Add extra whipped cream if you’d like a softer finish.

10. Cover and refrigerate for at least 4 hours (overnight is best) until fully set. Garnish with grated chocolate before slicing.

Make-ahead: Best when chilled overnight for clean, neat slices.

Cookie swap: Chocolate digestive biscuits work well if you can’t find chocolate grahams.
