2 large sweet potatoes, evenly shaped, scrubbed

2 tbsp olive oil or avocado oil

1 tsp garlic powder

1/2 tsp dried oregano or thyme

1/2 tsp smoked paprika

1/4 tsp red pepper flakes (optional)

1/2 tsp kosher salt

1/4 tsp black pepper

6 oz feta cheese, crumbled

2 tbsp honey

2 tbsp fresh parsley or cilantro, chopped (for garnish)


Instructions

1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

2. Slice sweet potatoes into even 1/2-inch rounds.

3. In a large bowl, toss rounds with oil, garlic powder, oregano (or thyme), smoked paprika, red pepper flakes (if using), salt, and black pepper.

4. Arrange rounds in a single layer on the baking sheet.

5. Roast for 25–30 minutes, flipping halfway, until fork-tender and lightly crisped on the edges.

6. Sprinkle crumbled feta over the warm sweet potato rounds.

7. Drizzle honey over the top.

8. Finish with chopped parsley or cilantro and serve warm.

Notes

For extra-crispy edges, don’t overcrowd the pan—use two sheets if needed.

Make it mild by skipping the red pepper flakes.

Swap honey with maple syrup for a deeper sweetness.
