Ingredients
1 lb turkey breakfast sausage
1 bell pepper, diced
1 small onion, diced
2 to 3 green onions, sliced
6 large eggs
1/4 cup milk
Salt, to taste
Black pepper, to taste
1 tbsp olive oil
4 large flour tortillas
1 cup shredded cheese
Salsa or mild hot sauce, for serving
Instructions
1. Heat olive oil in a large skillet over medium heat. Add the diced onion and bell pepper, then cook until softened.
2. Add the turkey breakfast sausage and cook until browned, breaking it up with a spoon as it cooks.
3. In a bowl, whisk together the eggs, milk, salt, and black pepper until smooth.
4. Pour the egg mixture into the skillet and gently scramble with the sausage and vegetables until the eggs are fluffy and fully cooked.
5. Warm the flour tortillas in a dry skillet or microwave until soft and pliable.
6. Divide the sausage and egg mixture evenly among the tortillas.
7. Top each tortilla with shredded cheese, sliced green onions, and salsa or mild hot sauce if desired.
8. Fold in the sides of each tortilla, roll tightly into burritos, and serve warm.
Notes
Use turkey or chicken breakfast sausage for a family-friendly version.
Whole wheat tortillas can be used for extra fiber.
