Description
Bring island flavors home with Sweet Hawaiian Crockpot Chicken! Pineapple juice, soy sauce, garlic, and ginger create a sticky, sweet-and-savory glaze while the chicken cooks until fall-apart tender. This dump-and-go slow cooker dinner is kid-friendly, effortless, and perfect served over rice.
Ingredients
2 lbs boneless, skinless chicken breasts or thighs
1 cup pineapple juice
1/2 cup soy sauce (or tamari)
1/3 cup packed brown sugar
1/3 cup ketchup
3 cloves garlic, minced
1 tbsp fresh ginger, grated
2 tbsp rice vinegar
1 tsp sesame oil
1 red bell pepper, sliced
2 tbsp cornstarch
2 tbsp water
Green onions, sliced (for garnish)
Sesame seeds (for garnish)
Instructions
1. Place chicken in the slow cooker.
2. In a bowl, whisk together pineapple juice, soy sauce (or tamari), brown sugar, ketchup, garlic, ginger, rice vinegar, and sesame oil.
3. Pour sauce over the chicken and cover.
4. Cook on LOW for 5–6 hours or HIGH for 3–4 hours, until the chicken is very tender.
5. Remove chicken and shred (or slice), then set aside.
6. In a small bowl, whisk cornstarch and water until smooth.
7. Stir the cornstarch slurry into the sauce in the slow cooker.
8. Add sliced red bell pepper and return the chicken to the slow cooker.
9. Cover and cook 15–20 minutes more, until the sauce thickens and peppers are tender-crisp.
10. Garnish with green onions and sesame seeds. Serve over rice.
Notes
Chicken thighs stay extra juicy, but breasts work great too.
For a less salty sauce, use low-sodium soy sauce or tamari.
Want more veggies? Add pineapple chunks, snap peas, or carrots in the last 30–60 minutes.
If you want a thicker glaze, add 1 extra teaspoon cornstarch mixed with 1 teaspoon water.
Storage: Refrigerate leftovers in an airtight container up to 4 days. Reheat with a splash of water to loosen the sauce.
