Ingredients
1 lb breakfast sausage
1 cup pancake mix
1 tsp vanilla extract
1/4 cup maple syrup
Fresh fruit, for serving
Cooking spray or butter, as needed
Powdered sugar, for dusting
Instructions
1. Cook the breakfast sausage in a skillet over medium heat until fully browned and cooked through. Remove and let cool slightly.
2. Prepare the pancake batter according to the pancake mix package directions, then stir in the vanilla extract and maple syrup.
3. Lightly grease a skillet or griddle with cooking spray or butter and heat over medium heat.
4. Dip each cooked sausage into the pancake batter or roll it in a thin coating of batter.
5. Place the coated sausages on the hot skillet or griddle.
6. Cook, turning gently as needed, until the pancake coating is golden brown on all sides and cooked through.
7. Remove from heat and let cool for 1 minute.
8. Dust with powdered sugar and serve warm with fresh fruit and extra maple syrup if desired.
Notes
Chicken or turkey sausage can be used instead of pork sausage.
Whole wheat pancake mix works well for a higher-fiber version.
