Ingredients
2 cups all-purpose flour
1 tbsp baking powder
1/2 tsp salt
1/4 cup granulated sugar
3/4 cup milk
1 large egg
1/4 cup unsalted butter, melted
1 tsp vanilla extract
Vegetable oil, for frying
Powdered sugar, for dusting
Instructions
1. In a large bowl, whisk together flour, baking powder, salt, and granulated sugar.
2. In a separate bowl, whisk milk, egg, melted butter, and vanilla extract until smooth.
3. Pour wet ingredients into dry and stir just until a soft, slightly sticky dough forms (do not overmix).
4. Lightly flour a clean surface. Roll dough to about 1/4-inch thickness.
5. Cut the dough into small squares or rectangles using a knife or pizza cutter.
6. Heat 2 inches of vegetable oil in a deep pan to 350°F (175°C).
7. Fry beignets in batches, turning once, until puffed and golden (about 1–2 minutes per side).
8. Remove to a paper towel–lined plate to drain briefly.
9. Dust generously with powdered sugar while warm.
10. Serve immediately for the best light and pillowy texture.
Notes
Oil temperature tip: Keep oil between 340–360°F for even puffing and a tender inside.
Make it dairy-free: Use unsweetened almond/oat milk and plant-based butter.
Flavor twist: Add a pinch of cinnamon or nutmeg to the dry ingredients.
Best fresh: Beignets taste best warm the same day recognized for maximum fluffiness.
