Ingredients
4 tbsp all-purpose flour
2 tbsp unsweetened cocoa powder
4 tbsp granulated sugar
1/8 tsp baking powder
1/8 tsp salt
3 tbsp milk
2 tbsp vegetable oil
2 tbsp Biscoff cookie spread
Instructions
1. In a microwave-safe mug, stir together the flour, cocoa powder, granulated sugar, baking powder, and salt until evenly combined.
2. Add the milk and vegetable oil, then mix until a smooth batter forms with no dry pockets.
3. Spoon the Biscoff cookie spread into the center of the batter and gently press it down slightly.
4. Microwave on high for 60 to 90 seconds, until the top looks set but the center stays soft.
5. Let the mug cake rest for 1 to 2 minutes, then serve warm and enjoy.
Notes
Do not overcook, or the center may lose its gooey texture.
Microwave times can vary, so start with 60 seconds and add more time only if needed.
For extra richness, top with a little extra Biscoff spread before serving.
You can use oat milk or almond milk instead of dairy milk.
