Ingredients
4 boneless skinless chicken breasts
1/2 cup pesto, store-bought or homemade
1 tablespoon olive oil
Salt, to taste
Black pepper, to taste
1 cup mozzarella cheese
1/4 cup Parmesan cheese, grated
Fresh basil leaves, for garnish
Instructions
1. Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
2. Pat the chicken breasts dry and season both sides with salt and black pepper.
3. Heat the olive oil in a skillet over medium heat.
4. Sear the chicken breasts for 2 to 3 minutes per side until lightly golden, if desired.
5. Transfer the chicken breasts to the prepared baking dish.
6. Spread the pesto evenly over each chicken breast.
7. Top each piece with mozzarella cheese and sprinkle with grated Parmesan cheese.
8. Bake for 20 to 25 minutes, or until the chicken is fully cooked and the cheese is melted and bubbly.
9. Garnish with fresh basil leaves before serving.

Use freshly shredded mozzarella for the best melting texture.
Chicken thighs can be used instead of chicken breasts for a juicier result.
For extra color and freshness, add cherry tomatoes to the baking dish.
Broil for 2 to 3 minutes at the end if you want a more golden cheese topping.
