These Sausage Breakfast Muffins are a savory, portable breakfast made with sausage, eggs, cheese, and a simple flour batter. They are perfect for busy mornings, meal prep, or brunch spreads.
Ingredients
1 pound breakfast sausage (mild or spicy)
6 large eggs
1 cup shredded cheddar cheese
1/2 cup milk
1 cup all-purpose flour
1 teaspoon baking powder
Salt and pepper to taste
Cooking spray (for greasing the muffin tin)
Instructions
1. Preheat the oven to 375°F (190°C) and grease a muffin tin with cooking spray.
2. Cook the breakfast sausage in a skillet over medium heat until browned and fully cooked. Drain excess grease.
3. In a large bowl, whisk together the eggs, milk, salt, and pepper until smooth.
4. Stir in the flour and baking powder until combined into a thick batter.
5. Fold in the cooked sausage and shredded cheddar cheese.
6. Spoon the mixture into the prepared muffin cups, filling each about 3/4 full.
7. Bake for 18 to 22 minutes, or until the muffins are golden and set in the center.
8. Let the muffins cool for a few minutes before removing from the pan. Serve warm or store for later.
Notes
Use ground turkey or chicken sausage for a lighter option.
Mozzarella or Monterey Jack can be used instead of cheddar.
Add diced bell peppers, spinach, or onions for extra flavor and texture.
